How to Make Buttermilk From Milk

It’s happened to all of us – we get halfway through a recipe before realizing that we forgot to buy something on the ingredients list. It’s OK if it’s an item we usually have on hand, but most likely buttermilk probably isn’t chilling in your fridge.

So, how do you make buttermilk from regular milk? Simple: A little lemon juice.

Here’s a good substitution for buttermilk:

Make your own buttermilk by adding 1 tablespoon lemon juice to a 1-cup glass measuring cup. Add milk to the 1-cup line and stir lightly to blend. Let stand a few minutes before using.

Note: If you need more or less than 1 cup, adjust the amount of lemon juice as needed. There are 3 teaspoons in 1 tablespoon, so use 1.5 teaspoons of lemon juice for every half-cup of buttermilk needed.
