Red potatoes and fresh parsley punch up the taste in this family picnic favorite.

  • 8 medium red potatoes
  • 1 ½ cups mayonnaise
  • 1 cup sour cream
  • 1 ½ teaspoons horseradish
  • 1 teaspoon celery seed
  • ½ teaspoon salt
  • 1 cup fresh parsley, chopped
  • 1 medium onion, minced


  1. Boil potatoes in jackets. Peel and slice 1/8 inch thick.
  2. Combine remaining ingredients except the onions and parsley.
  3. Mix onion and parsley separately.
  4. Place a layer of potatoes in serving dish; salt lightly. Cover with layer of sauce.
  5. Sprinkle with parsley and onion.
  6. Continue layering until done, ending with parsley and onion. Do not stir.
  7. Chill 8 hours or overnight.
