Ingredients
- 3 cloves garlic, mashed
- ½ cup cider vinegar
- ½ cup sugar
- 1 cup water
- one bunch fresh mint, rinsed
- ½ red onion, sliced very thin
- 1 cup blueberries
- 1 medium cucumber, peeled and sliced very thin
- 1 teaspoon coarse salt
- ½ teaspoon red pepper flakes
Instructions
- In a medium saucepan, combine garlic, vinegar, sugar and water. Stir over medium heat until sugar dissolves. Stir in red pepper and salt. Cool to lukewarm.
- Place onion, cucumber, berries and mint in an airtight container, and cover with the vinegar mixture. Seal and refrigerate 4 to 6 hours.
- Remove mint and garlic. Serve over grilled chicken or pork chops.
Tips & Notes
These are also tasty when paired with yogurt and served with Greek or Indian food.
