Ingredients

  • ½ cup fresh lime juice
  • 2 teaspoons kosher salt
  • ½ teaspoon fine pepper
  • 1 teaspoon crushed red pepper
  • 2 teaspoons garlic, minced
  • ½ cup cilantro, chopped
  • ½ cup olive oil
  • 6 (6-ounce) boneless, skinless chicken breasts

Instructions

  1. Place chicken breasts in zipper-seal bag. Using a rolling pin or similar implement, flatten the thicker parts of the chicken so they match the thinner parts. You want a consistent thickness (no thinner than 3/4 of an inch) throughout to ensure the chicken cooks evenly.
  2. Mix marinade ingredients and pour over chicken. Marinate at least 2 hours or overnight.
  3. Remove from bag.
  4. On gas grill over medium-high heat, grill chicken breasts with lid down for six minutes. Turn and grill with the lid up 6 to 10 more minutes or until chicken reaches 170 degrees on a meat thermometer.

Tips & Notes

Do you have a lot of leftover cilantro with this recipe? Serve up a side of Zesty Corn and Black Bean Salsa, which also uses a lime and cilantro dressing.

  2. Awesome! The whole family loved it! Wonderful flavor! I marinated the chicken for 6 hours and it still had wonderful flavor!

  3. Can you make this on a charcole grill??? I was planning on making this but now hold off because we don’t have a gas grill :/

    • Absolutely! I have made this on a charcoal grill or even used the marinade recipe and just baked chicken in the oven. Just follow the instructions up to step 3, and then grill your chicken as you would normally on a charcoal grill (6-8 minutes for each side for boneless breasts, until internal temperature reaches 165 degrees on a meat thermometer).

Hope this helps, and happy grilling!

  4. Ahhhhhh-mazing! My family loves this recipe! So glad I found it! This is the only way I want to eat grilled chicken anymore!!

  5. I will be serving someone who doesn’t like cilantro. How do you think this would work with parsley or basil?

I have made this several times for company and everyone raves about it. Except some people don’t eat cilantro 🙁

    • Hi Lisa,

We know what you mean, it seems like people either love or hate cilantro! Parsley would definitely work with this recipe. Basil would work too, and we suggest trying lemon basil to stick with the citrus theme. You could even use lemon juice in place of the lime juice. Hope this helps!

    • Hi Melissa,

I think you could follow any marinated baked chicken recipe and use this cilantro lime dressing as the marinade. Hope this helps!

  6. Thanks for this delicious recipe, I am gonna try this at home this weekend hope my family will like it as well.

  7. We love this recipe! After we grill the chicken we slice it up with veggies and put it on a tortilla shell as a grilled tasso recipe!

  8. This chicken marinade is absolutely delicious! I used a bit more cilantro and do not mince garlic in a marinade, I prefer to press it. I pressed 3 large cloves. The flavors were perfectly balanced and made the chicken so delicious! Hubby approved! Served it with a side of corn and a tossed green salad. Great recipe!
