Barbecued Meatballs

- 2 pounds ground beef
- 1 pound ground pork
- 12 ounces (1 can) evaporated milk
- 1 cup oatmeal
- 1 cup cracker crumbs
- 2 eggs
- ½ cup onion, chopped
- ¼ cup green pepper, chopped
- 2 teaspoons salt
- 2 teaspoons chili powder
- ½ teaspoon garlic powder
- ½ teaspoon pepper
Sauce*
- 2 cups ketchup
- 1 cup brown sugar
- ½ teaspoon liquid smoke
- ½ teaspoon garlic powder
- ½ cup onion, chopped
* Makes enough sauce for one 9-by-13-inch pan. Multiply or reduce as needed.
Instructions
- Heat oven to 350 degrees.
- Combine all meatball ingredients. A stand mixer with an attached dough hook makes mixing easier. Shape into walnut-sized balls. You can use a 1 ½-inch cookie scoop to form the meatballs, which yields about 65. If you use your hands, you’ll end up with closer to 80.
- Place meatballs on greased 9-by-13-inch pans, or multiple smaller pans, for either baking or freezing.
- Just before baking, combine sauce ingredients in a saucepan over medium heat and cook until sugar dissolves.
- Pour sauce over meatballs. Bake for 50 to 60 minutes.
