Date Almond Scuffins

Sweet dates and crunchy almonds add texture to these delicious bites, which are a combination of scones and muffins.

Ingredients

  • 1 2/3 cups dates, finely chopped
  • 1 cup plus 1 teaspoon all-purpose flour, divided
  • 2 cups white whole-wheat flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ cup (1 stick) butter
  • ½ cup sliced almonds
  • 1 cup whole milk
  • 1 large egg

Instructions

  1. Heat oven to 350 degrees. Coat 12 standard muffin cups with cooking spray.
  2. In a small bowl, toss chopped dates with 1 teaspoon all-purpose flour to keep them from sticking together.
  3. In a large bowl, whisk together whole-wheat flour, 1 cup all-purpose flour, sugar, baking powder and salt. Cut in butter with pastry cutter until mixture is crumbly.
  4. In a separate small bowl, whisk milk and egg together.
  5. Make a well in center of flour mixture and using a fork, stir in liquid mixture along with dates and almonds. Blend just until all ingredients are moistened. Batter will be very thick, like scone dough.
  6. Spoon batter into prepared muffin cups, dividing evenly and filling full.
  7. Bake 20 minutes or until tops are slightly golden and toothpick inserted in center comes out clean.
