Henrietta’s Pumpkin Bread With Pecans

This pumpkin bread recipe, named for the family friend who created it, can be given as a holiday gift, warmed for breakfast or enjoyed for dessert.

Ingredients

  • 1 cup oil
  • 3 cups sugar
  • 3 eggs
  • 15 ounces canned pure pumpkin or homemade puree
  • 1 cup pecans, chopped
  • 3 cups flour
  • 1 teaspoon cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350º F.
  2. Mix together oil, sugar, eggs and pumpkin.
  3. Combine all dry ingredients in a separate bowl, and add to pumpkin mixture.
  4. Add chopped nuts.
  5. Prepare three small loaf pans or one large Bundt pan with cooking spray. Pour in batter.
  6. Bake for about an hour or until toothpick comes out clean.

Tips & Notes

If using homemade pumpkin puree, the recipe calls for 15 ounces. This translates to 1 ounce less than 2 cups – there are 8 ounces in a cup.
