Pear Bran Muffins

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup wheat bran
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups buttermilk
  • 2 large eggs, lightly beaten
  • 3 tablespoons canola oil
  • 1-2 Bosc pears, cored and cut into ¼-inch dice (about 1 cup)
  • 1 ½ teaspoons vanilla

Instructions

  1. Preheat oven to 350 degrees. Line a muffin tin with paper liners.
  2. In a large bowl, combine flour, bran, sugar, cinnamon, ginger, baking powder and salt.
  3. In a separate mixing bowl, combine buttermilk, eggs, oil, pears and vanilla.
  4. Make a well in the center of the dry ingredients. Add wet ingredients to dry and mix just to combine; do not over mix.
  5. Divide batter evenly into muffin cups. Bake for 20 minutes. Cool and serve.
