Blueberry Drop Cookies
These light blueberry cookies also feature lemon zest and almond extract for a flavorful combination.

Ingredients

  • ½ cup vegetable shortening
  • 1 cup sugar
  • 1 egg
  • ¼ cup milk
  • ½ teaspoon almond extract
  • 1½ teaspoons lemon zest, grated
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup fresh blueberries

Instructions

  1. In a large mixing bowl, cream shortening and sugar. Add egg, milk, almond extract and lemon zest, mixing well after each addition.
  2. In a separate bowl, combine flour, baking powder and salt, and gradually add to creamed mixture, blending well. Fold in blueberries.
  3. Cover and chill for 4 hours.
  4. Preheat oven to 375 degrees.
  5. Drop dough by teaspoonfuls 1½ inches apart onto greased cookie sheet.
  6. Bake for 12-15 minutes. Cool on cookie sheets before removing.
