Peanut Parsley Pesto

This pesto, featuring peanuts, fresh parsley and garlic is great on panini sandwiches or noodles.

Ingredients

  • 1 cup salted peanuts
  • 1 cup fresh parsley, packed lightly
  • 1 cup Parmesan cheese, grated
  • 4 cloves garlic
  • 1 cup olive oil
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Puree all ingredients together in a food processor or blender until evenly mixed.
  2. Serve over grilled pork chops, broiled salmon, on pasta or as a spread on sandwiches
