Kung Pao Watermelon Shrimp

Kick Kung Pao up a notch by adding juicy watermelon to this stir-fry dish.

Ingredients

  • 2 tablespoons peanut oil
  • 6 cloves garlic, sliced
  • 2 pounds large shrimp, peeled and cleaned
  • 1 cup dry roasted and salted peanuts
  • 1 cup prepared Kung Pao sauce
  • 2 cups watermelon, chopped

Instructions

  1. In a large heavy saute pan or wok, heat the oil over high heat.
  2. Saute the garlic for 30 seconds, and then add the shrimp. Stir-fry until the shrimp begin to cook and plump up.
  3. Add the peanuts and saute for another 30 seconds.
  4. Reduce heat to low and add the sauce. Simmer just until shrimp are cooked.
  5. Remove from heat. Stir in watermelon and serve immediately.

Short on time? Buy pre-cut chunks of watermelon in the produce department.
