  1. I’m making this berry mint sauce now to go with a roasted pork loin for Easter Dinner. I used a combination of strawberries, blueberries and raspberries… and wow! The flavors are delicious! However, I caution you on the amount of sugar you put in. It calls for 1/3 cup and it is very sweet, but I have not pureed the sauce or added the mint yet. I think in the future, I might be a little more conservative with the amount of sugar. In order to combat the sweetness, I added some balsamic vinegar. The vinegar really brings out the flavor of the berries.

Also, I made two versions of this sauce. One with sugar and one diabetic friendly. Both are delicious so far. Waiting for the sauce to cool and will finish the recipe.

  2. Just a follow up to my first comment. The berry mint sauce was delicious and complimented the pork loin very well. Our guests loved it so much they went back for thirds, and took home 2 plates each! This is easily a 5+ star recipe. So simple to make and so very impressive to plate. Make it! You won’t be disappointed.
