Migas

A traditional Mexican dish, Migas is made with eggs, black beans and cheese. An easy meal that can be made in no time!

Ingredients

  • 6 eggs, beaten
  • 15 ounces canned black beans
  • 1 cup cheddar or Monterey Jack cheese, shredded
  • 2 cups tortilla chips, slightly crushed OR 6 corn tortillas, fried and chopped
  • 1 jar salsa
  • 2 tablespoons cooking oil
  • chili powder, cumin or hot sauce, to taste, optional

Instructions

  1. Heat 2 tablespoons cooking oil in a large skillet over medium/high heat. Pour in the eggs.
  2. Using a spatula, gently lift the sides of the omelet to allow the uncooked egg to spill onto the bottom of the skillet.
  3. When eggs are still slightly gooey, pour the beans, cheese and chips evenly over the top.
  4. Stir with the spatula just until the mixture is evenly distributed. Season with chili powder, cumin or hot sauce if desired.
  5. Serve immediately with salsa.

Tips & Notes

This dish would be great with that chopped tomato or green pepper from the garden, or you can use chopped olives. Just toss them on top!
