Squash and Apple Bake with Sausage

Crisp fall apples are a perfect partner for hearty winter squash in this easy bake.

Ingredients

  • 2 pounds butternut or buttercup squash
  • ½ cup brown sugar
  • ¼ cup butter, melted
  • 1 tablespoon flour
  • 1 teaspoon salt
  • ½ teaspoon mace (the outer shell of nutmeg)
  • 2 apples, cored and cut into ½-inch slices
  • ½ pound sausage, lightly browned

Instructions

  1. Preheat oven to 350 degrees.
  2. Cut the squash in half. Pare squash (scoop out the seeds and pulp from the middle, and cut off the tough outer rind). Cut into ½-inch slices.
  3. In a separate bowl, stir together brown sugar, butter, flour, salt and mace.
  4. In an ungreased 12-by-7-inch baking dish, arrange squash and top with apple slices.
  5. Sprinkle cooked sausage and brown sugar mixture over top. Cover with foil.
  6. Bake for 50 to 60 minutes and serve.

Tips & Notes

For a pretty presentation, serve the bake in a cooked acorn squash.
