Tomato Pie

Mix fresh tomatoes, sweet onion, cheese and hot Italian sausage for a savory pie that’s anything but an ordinary dinner recipe.

Ingredients

  • 1 (9-inch) deep-dish pie shell
  • 4 large tomatoes, sliced
  • 1 large sweet onion, sliced very thin
  • ½ lb. hot Italian sausage, crumbled, fried and drained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Swiss cheese
  • ¼ cup Parmesan cheese
  • ¼ cup mayonnaise
  • ¼ cup finely slivered fresh basil

Instructions

  1. Preheat oven to 375 degrees.
  2. Slice the tomatoes and pat both sides with paper towel to remove some of the juice.
  3. In alternating layers, fill the pie shell with the tomatoes, onion, sausage and basil, reserving some basil to garnish.
  4. In a small bowl, mix the cheeses with the mayonnaise and spread over pie. Cover loosely with aluminum foil and bake for 30 minutes.
  5. Remove foil and bake for 30 minutes more.
  6. Garnish with fresh basil slivers. Can be served hot or cold.

Tips & Notes

  • You can substitute the Italian sausage with ground turkey or chicken sausage.
  • Vidalia onions are the most widely available sweet onion. Other sweet varieties include Maui, Walla Walla, Oso Sweet and Rio Sweet.
