Cantaloupe Salad

Sweet and refreshing, bright cantaloupe combines with zesty red onion and cool mint in this salad recipe.

Ingredients

  • 1 medium cantaloupe
  • ½ red onion
  • ⅓ cup fresh mint, chopped
  • ⅓ cup olive oil
  • ¼ cup white balsamic or white wine vinegar
  • ¼ cup honey
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Peel, seed and cut the cantaloupe into 1-inch cubes. Place in a large bowl.
  2. Slice onion into very thin rings. Sprinkle over cantaloupe. Add the chopped mint.
  3. In a separate bowl, whisk together olive oil, vinegar, honey, salt and pepper. Pour over melon, onion and mint.
  4. Toss gently until well blended. Serve chilled or at room temperature.
