Mom’s Green Bean Salad

Fresh green beans pair with crunchy walnuts and tangy red onion in this easy salad.

Ingredients

  • ½ pound fresh green beans, trimmed
  • 2 tablespoons walnuts, chopped
  • 2 tablespoons red onion, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • salt and pepper

Instructions

  1. Place a steamer basket in a large pot of water, and bring to a boil.
  2. Add green beans and steam for about 4 minutes. Transfer to a bowl. Add the walnuts and onion to the green beans.
  3. In a small mixing bowl, whisk together the oil, vinegar and mustard.
  4. Toss the dressing with the green beans. Season with salt and pepper.
