Easy Lemon Curd
Tangy lemon curd is a perfect topping for desserts, including Blueberry Panna Cotta.

Ingredients
- 1 stick butter
- 1 ¼ cups sugar
- 4 egg yolks, beaten
- 2/3 cup lemon juice
- 2 teaspoons lemon zest
Instructions
- Combine all ingredients in a medium saucepan. Stir over medium-low heat with a whisk until thickened.
- Remove from heat as soon as curd is thick enough to coat a spoon. This can be made several days ahead of serving.
- Spoon over sweet desserts like Blueberry Panna Cotta.
Tips & Notes
To get the maximum amount of juice from a lemon, simply microwave the lemon for 10 seconds before juicing. Or, roll on countertop for 10 seconds before juicing.
