Onion Apple Chutney

This onion apple chutney makes a delicious addition to a wide variety of dishes.

Ingredients

  • 2 tablespoons vegetable oil
  • 2 large onions, cut in half and thinly sliced into half moons
  • 2 tablespoons dark brown sugar
  • 1 large Braeburn apple, cut into 1/2-inch slices
  • 1/4 cup chicken broth
  • 2 tablespoons currants
  • 1/2 teaspoon lemon zest
  • 1 bay leaf
  • salt and pepper, to taste

Instructions

  1. In a large skillet, heat oil over medium-high heat. Add the onions and cook for 3 minutes. Reduce heat to medium-low and cook 10 minutes, stirring frequently.
  2. Sprinkle the sugar over the onions, mixing well, and cook until onions are soft.
  3. Add remaining ingredients and cook over medium heat until apples are tender. Remove bay leaf, and season with salt and pepper to taste.

Tips & Notes

This chutney tastes great on pork, fish or chicken dishes.
