Honey-Lemon Brussels Sprouts

Healthy Brussels sprouts combine with sweet honey and lemon zest for a flavorful side dish.

Ingredients

  • 12 ounces Brussels sprouts
  • 1 medium onion, peeled
  • 1 teaspoon olive oil
  • 1 cup chicken or vegetable stock
  • 3 tablespoons honey
  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon lemon zest

Instructions

  1. In a food processor, shred Brussels sprouts and onion.
  2. In a heavy saucepan, heat olive oil. Saute shredded sprouts and onion until they begin to brown. Stir in stock, honey, salt and red pepper.
  3. Stir occasionally until stock evaporates and sprouts are softened, about 15 to 20 minutes. Toss in lemon zest and serve immediately.
