Squash Croquettes
Looking for a simple side dish to use garden-fresh yellow squash? Try this straightforward version of fried squash.
Ingredients
- 2 cups yellow squash, finely chopped
- 1 cup onion, finely chopped
- 1 egg, beaten
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ cup plus 1 tablespoon all-purpose flour
- vegetable oil
Instructions
- In a large bowl, combine squash, onion, egg, salt and pepper. Mix well. Stir in flour.
- In a skillet, heat ½-inch oil over medium-high heat.
- Drop batter by tablespoonfuls into oil.
- Cook about 3 minutes per side or until golden brown, turning once.
- Drain croquettes on paper towels.
Tips & Notes
Optional: Garnish with finely chopped fresh chives, or try our recipe for Cajun Honey Mustard Sauce as a dip.

Did you boil and mash the squash first?
I’ve never made squash by chopping the squash first, or with a flour breading. I found this recipe kind of bland.
Made these tonight and added garlic powder to the mix. They were delicious. My 17 month old loved them. She thought I was making little pancakes. Thank you.
Tried it tonight; I recommend using less salt. Good recipe, though!

Doesn’t the squash need to be boiled and mashed first?
i have a question is it ok if i don’t give onions? Or how to make them less pungent, but I don’t like the taste of onions.

Awesome! I added minced garlic to the mix and a handful of shredded cheddar. And I did grate the squash and squeeze out a bunch of the water. Will definitely make these again cause I tricked my son into thinking they were big tater tots 🤫
