Swiss Chard With Pine Nuts and Golden Raisins

Give this spring green some zest with garlic and golden raisins.

Ingredients

  • 2 bunches red Swiss chard
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 teaspoons garlic, minced
  • 1 cup chicken broth
  • ¼ cup golden raisins
  • 2 tablespoons toasted pine nuts

Instructions

  1. Wash the Swiss chard and cut leaves from stem. Coarsely chop leaves.
  2. Heat olive oil in a large skillet. Add onion and saute until soft. Add garlic and saute two minutes.
  3. Add chard and toss until wilted. Add chicken broth and raisins, and simmer until greens are tender, about 10 minutes.
  4. Sprinkle with toasted pine nuts and serve.

Tips & Notes

When adding the Swiss chard to the pan, it may seem as if there’s too much, but just keep tossing and it will wilt enough to fit. You can also opt to make this dish vegetarian by substituting vegetable broth for the chicken broth.
