  • 2 pounds beef stew meat
  • 2 cups diced potatoes
  • 1 Vidalia onion
  • 2 cans diced tomatoes
  • 1 pack sliced carrots
  • 1 cup peas
  • 1 cup corn
  • 1 can V8 juice
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons ketchup
  • 2 sticks margarine


  1. Mix ingredients in a 7-quart pot or slow cooker.
  2. Bring stew to a boil, then reduce heat and cook at medium for 2 hours. If using a slow cooker, cook on high for 2 hours.
  3. Finally, turn to low heat and simmer for 3 hours.

        Hi Cathie,

        So sorry we don’t have the size on this! Since this recipe was submitted by a reader, we tested it once back in 2008, but this was before we kept a close eye on measurements. Judging by the lack of other liquids, I’d say a regular-sized can of V8. Hope this helps!
