Making soups in the Instant Pot is fun, easy and delicious. Over the past five years, I have created and shared over 100 Instant Pot recipes. They are all amazing and unique, but some of the most popular and viewed ones are the Instant Pot soups.

If you have an Instant Pot, then you know how easy and convenient this gadget is. It is quite affordable, and its benefits are enormous. Firstly, you cook pretty much everything in it. Whether it is soup, meat, frozen ingredients or desserts, it will do the job perfectly fine. Secondly, it cooks the meals at a fraction of the time compared to the traditional stovetop method. Therefore, you can have a full family meal in about 30 minutes. It’s the perfect gadget for both busy-families and novice chefs.

In this post, I will share with you three of my favorite Instant Pot soups that you can make during the week. All three recipes are very easy to follow and require little effort to prepare. In addition, I will share the links to my website where you can check step by step instructions along with a short video tutorial for each recipe.

What is an Instant Pot?

An Instant Pot is a multi-functional electric pressure cooker. It basically has the function of a slow cooker, steamer, rice cooker and yogurt cooker all in one.

Cooking meals in the Instant Pot is super easy because you simply dump the ingredients in the pot and cook them under high pressure. This way, the cooking time is reduced substantially and you are rewarded with a quick and delicious meal.

What can I cook in the Instant Pot?

As stated above you can cook pretty much anything in it. Some of the most popular things to cook in the Instant Pot are:

Meat: All types of meat can be cooked in it, such as beef, pork, chicken and lamb. Frozen meat also works.

Rice: Cooking rice in the Instant Pot is super simple, and you’re guaranteed to end up with perfectly cooked rice. Check out the best way to cook rice in the Instant Pot here.

Beans: They are quick to prepare and ideal to cook in the Instant Pot.

Vegetables: Pretty much any veggies can be cooked or steamed in it. Such as artichokes, broccoli, carrots, potatoes, etc.

Soups or Ramen: Soups and ramen can be ready in about 30 minutes or less.

Desserts: Any type of dessert can be cooked in the Instant Pot, such as rice pudding, cheesecake or flan. We have a wide selection of desserts on our site, so feel free to pick and try your favorite one.

3 Easy and Delicious Instant Pot Soups

Instant Pot Chicken Tortilla Soup

This soup is hearty and rich in flavors. If you’re looking for authentic Mexican flavors in a soup, this dish is the perfect one to try.

You will need the following ingredients:

  • Olive oil
  • Onion (peeled and diced)
  • Garlic cloves (peeled and minced)
  • Jalapeño peppers (seeded and diced)
  • Cooked chicken
  • Diced tomatoes and tomato juice
  • Black beans and pinto beans
  • Sweet corn
  • Chicken broth
  • Lime
  • Chili powder
  • Spices, such as cumin, chili powder, marjoram, salt, black pepper, paprika
  • Fresh cilantro

How to make Instant Pot Chicken Tortilla Soup

For exact recipe steps please visit the detailed recipe, but the general steps are the following:

  1. Pressure-cook the ingredients: Put all the ingredients including the vegetables, broth, juices, meat and spices except for the cilantro in the pot. Close the lid, and cook on HIGH pressure for 10 minutes, followed by Natural Pressure Release.
  2. Shred the chicken: Once cooked, open the lid and shred the chicken using two forks. Then, put it back and stir together with the soup.
  3. Garnish: I love to garnish it with freshly chopped cilantro and tortilla chips and serve it warm.

Instant Pot Cabbage Roll Soup

This soup is very filling and equally easy to make. You can serve it during any time of the year, and it’s hearty and full of healthy nutrients.

You will need the following ingredients:

  • Bacon
  • Ground beef (or chicken or turkey)
  • Onion and garlic
  • Crushed tomatoes, tomato sauce, and paste
  • Carrots
  • Chopped cabbage
  • Cooked rice
  • Beef broth
  • Spices: thyme, oregano, Italian seasoning, salt and pepper

How to make Instant Pot Cabbage Roll Soup 

For the full recipe with a short video tutorial, please check the detailed version. But the general steps are as follows:

  1. Cook the bacon using the sauté function of the Instant Pot. Similarly, you can use pre-cooked bacon to save some time.
  2. After that, brown the beef for a few minutes on each side. This is an important step as it will add extra flavor.
  3. Add the remaining ingredients to the pot, including the broth.
  4. Close the lid, cook on HIGH pressure for 10 minutes, followed by natural pressure release.
  5. Serve warm.

Instant Pot Stuffed Pepper Soup

This soup is perfect to enjoy on cold winter days. It’s very comforting and ready in about 30 minutes.

You will need the following ingredients:

  • Olive oil
  • Ground beef (or ground chicken)
  • Onion and garlic
  • Worcestershire sauce
  • Herbs: dried oregano, thyme, Italian seasoning, salt and pepper
  • Tomato paste
  • Diced tomatoes and tomato sauce
  • Bell pepper
  • Broth
  • Uncooked rice
  • Chopped parsley

How to make Instant Pot Stuffed Pepper Soup

  1. Using the Instant Pot sauté function, sauté onion and garlic.
  2. Then, add all the ingredients to the pot, including the uncooked rice.
  3. Cook the soup for 4 minutes on HIGH pressure with a 10-minute Natural Pressure Release.
  4. Stir in the cooked rice into individual bowls just before serving.
