Apple Bacon Belgian Waffles

Fluffy Belgian waffles get a tasty upgrade from salty bacon and fresh apples.

Ingredients

  • 1 cup white whole-wheat flour
  • 1 cup all-purpose flour
  • ¼ cup light brown sugar, firmly packed
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ cup vegetable oil
  • 2 cups buttermilk
  • 2 eggs, lightly beaten
  • 1 ½ teaspoons vanilla extract
  • ⅔ cup apple, finely chopped
  • ⅔ cup cooked bacon, finely crumbled

Instructions

  1. In a large bowl, whisk together both flours, brown sugar, baking powder and salt.
  2. In a medium bowl, whisk together oil, buttermilk, eggs and vanilla extract. Create a well in the center of the flour mixture and pour in liquid mixture. Stir just until moistened, being careful not to over-mix. The batter will be slightly lumpy. Lightly stir in apple and bacon.
  3. Using a preheated Belgian waffle maker and following manufacturer’s directions, add batter to grid. Close and bake appropriate time until waffles are completely done and browned.
  4. Remove from grid and enjoy immediately with desired toppings.

Tips & Notes

Top the waffles with your favorite maple syrup, chopped red and green apples, and crumbled bacon.
