- 4-6 pounds turkey breast
- 2 oranges
- 2 lemons
- 2 limes
- 4 tablespoons Kosher salt
- ⅓ cup brown sugar
- 1 teaspoon black pepper
- Rinse turkey breast and pat dry. Place in a large zip-close bag.
- Pulse remaining ingredients until well chopped in a food processor. Do not peel the citrus fruits before pulsing. Spoon the mixture into the bag with the turkey. Marinate for 24 hours.
- Remove the citrus from the turkey. Smoke according to smoker instructions recommended by the manufacturer. If using a grill*, follow slow-roasting instructions.
*Add 1 tablespoon of liquid smoke to the marinade if using a grill instead of a smoker.
