Four Bean Salad

Green beans, wax beans, kidney beans and garbanzo beans are featured in this Four Bean Salad.

Ingredients

Dressing

  • ½ cup canola oil
  • ½ cup cider vinegar
  • ¼ cup sugar
  • salt and pepper, optional

Salad

  • 1 can (16 ounces) green beans, drained and rinsed
  • 1 can (16 ounces) wax beans, drained and rinsed
  • 1 can (16 ounces) kidney beans, drained and rinsed
  • 1 can (16 ounces) garbanzo beans, drained and rinsed
  • 1 small red onion, peeled and finely diced (about ½ cup)
  • 1 medium green bell pepper, finely diced (about 1 cup)

Instructions

  1. Mix dressing ingredients together in a large bowl.
  2. Add beans, onion and bell pepper to dressing and toss to coat. Refrigerate for at least 1 hour.

Tips & Notes

Steam or blanch fresh green and waxed beans instead of using canned, if desired.
