Grilled Chicken Thighs with Blueberry Salsa

Ingredients
- 10-12 boneless, skinless chicken thighs
- ½ cup favorite vinaigrette dressing (such as Balsamic Vinaigrette)
Blueberry Salsa:
- 2 cups blueberries, washed and coarsely chopped
- ⅓ cup green onions, chopped
- ½ red pepper, chopped fine
- 1 jalapeño pepper, minced
- ½ cup cilantro, chopped
- ⅓ cup lime juice
- ⅓ cup olive oil
- salt and pepper, to taste
Instructions
- Rinse chicken and place in a zip-close bag. Add dressing and marinate for 1-2 hours in refrigerator.
- Meanwhile, combine all blueberry salsa ingredients in a medium-sized bowl. Refrigerate.
- Grill chicken until well done (thermometer inserted in the center reads 170 degrees). To serve, plate chicken and top with blueberry salsa.

??? If you need this recipe to be gluten-free, make sure to use a gluten-free vinaigrette to marinate the chicken.
