Mashed Red Skin Potatoes

Fluffy mashed potatoes pair perfectly with hearty stew.

Ingredients

  • 3 pounds red-skin potatoes, cut into ¾-inch cubes
  • 1 teaspoon salt
  • ¾-1 cup half-and-half
  • ½-1 stick butter
  • salt and freshly ground pepper, to taste

Instructions

  1. Place potatoes in a saucepan and add cold water to 1 inch above potatoes.
  2. Add 1 teaspoon salt to potatoes and bring to a boil, then reduce heat and simmer for 15 to 20 minutes or until potatoes are fork tender.
  3. Drain potatoes, discarding water. Mash using a potato masher with butter and half-and-half. Season to taste with salt and freshly ground pepper.
  4. Serve with Coffee Porter Beef Stew and chopped parsley.
