RC Cola Cupcakes
Turn the classic drink – RC Cola – into a dessert.


  1. Heat oven to 350 degrees. Line cupcake tin with 24 liners.
  2. In a large bowl, cream together butter and sugar. Whisk in eggs, vanilla, cocoa powder and baking soda.
  3. In a separate bowl, combine RC Cola and buttermilk. Add alternately with flour to butter mixture until just combined. Spoon into cupcake liners, filling two-thirds full.
  4. Bake for 15 to 20 minutes, until tops spring to the touch. Set aside, and quickly prepare topping.
  5. For topping, whisk together all ingredients and spoon on top of cupcakes. Garnish with walnuts and marshmallows, if desired. Allow to set before serving.
