Refreshing cucumber and strawberries give a spring twist on traditional caprese skewers.

- Combine all pesto ingredients in a food processor. Puree until very smooth. Set aside. (Keep in the fridge in a tightly covered container for up to three days).
- Thread berries, cucumbers and cheese on small bamboo skewers. Serve with pesto dip on the side. Garnish with fresh mint leaves if desired.
