Cider-Glazed Shrimp

Grilled shrimp glazed with cider makes for a healthy and delicious main course.

Ingredients

  • 1 teaspoon olive oil
  • 2 cloves garlic, chopped
  • 1 teaspoon fresh ginger, peeled and chopped
  • ½ cup apple wine
  • ½ cup apple cider
  • 2 tablespoons honey
  • 1 jalapeno pepper, chopped
  • ¼ cup vegetable oil
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon cracked black pepper
  • 24 medium shrimp, peeled and deveined

Instructions

  1. Heat olive oil in a sauté pan over medium-high heat until hot. Add garlic and ginger. Saute until fragrant, about a minute.
  2. Add wine and reduce by half. Then add cider and reduce again by half. Add honey and jalapeno and cook for about 2 minutes.
  3. Remove from heat and stir in oil, thyme and pepper. Set aside to cool.
  4. Thread shrimp on skewers and place on prepared grill. Generously brush top and sides with glaze. After about 2 minutes, turn skewers and brush them again with glaze.
  5. Cook another 2 minutes or until shrimp is just cooked through. Brush lightly with remaining glaze on all sides and serve immediately.
