Turkey, Brie and Cranberry Crostini

Use leftover Thanksgiving turkey and cranberry relish for this tasty appetizer.

Ingredients

  • 18 slices garlic crostini or baguette-sized toast
  • 18 thin slices turkey, cut to fit crostini
  • 18 slices (about 6 ounces) Brie cheese
  • ½ cup cranberry relish
  • ½ teaspoon onion powder
  • ⅛ teaspoon cayenne pepper
  • ½ cup spinach leaves

Instructions

  1. Heat broiler to high. Spread out crostini slices on a large baking sheet. Layer turkey and cheese on top of each slice. Broil until cheese is just melted and bubbly.
  2. In a bowl, combine cranberry sauce, onion powder and cayenne pepper. Warm mixture slightly in the microwave and stir well.
  3. On each crostini slice, layer spinach leaves on top of the cheese, then a teaspoon of the cranberry sauce mixture on top of the spinach. Serve immediately.
