- 4 cups (1 pound) mild cheddar cheese, grated
- ¾ cup mayonnaise
- ½ cup diced pimentos, drained
- Mix all ingredients in a medium-sized bowl. Refrigerate.
- Spread on bread to serve as a sandwich. If you want to doll it up, cut off the crusts and add alfalfa sprouts.
Tips & Notes
For a spicier version, substitute cheddar cheese with pepper jack and add a clove of crushed garlic.
