Fresh Ricotta Tomato Salad

Make this easy, seasonal appetizer, featuring fresh heirloom tomatoes, with homemade ricotta cheese.

Ingredients

  • 4 medium ripe tomatoes
  • 1 ½ cups fresh ricotta
  • ⅓ cup basil
  • 1 teaspoon orange zest (optional)
  • ½ cup olive oil
  • ⅓ cup white wine vinegar or champagne vinegar
  • salt and pepper, to taste

Instructions

  1. Slice the tomatoes and place them on a large platter.
  2. Divide the cheese over the tomatoes. Cut the basil into slivers (chiffonade style), and evenly distribute the orange zest and basil over the cheese and tomatoes.
  3. In a small bowl, whisk together olive oil, vinegar, salt and pepper. Pour over salad just before serving.

Tips & Notes

This salad can be chilled or served at room temperature. Serve it with crust French bread as a salad course or alone as an appetizer.
