- In a wide, shallow bowl, whisk together eggs, milk, vanilla and cinnamon. Set aside.
- In a medium saucepan, combine half-and-half, brown sugar and 2 tablespoons butter. Stir over heat until well combined and sugar is dissolved. Cover and simmer over very low heat.
- In a skillet, melt remaining 2 tablespoons of butter. Dip bread into egg mixture, ensuring both sides are coated, and fry french toast in the skillet until each side is golden.
- Top each serving with bananas. Drizzle caramel over prepared toast. (If caramel is too thick, stir in ¼ cup more half-and-half). Sprinkle lightly with salt. Serve immediately.
