Cinnamon Apple Oatmeal Bake

Ingredients
- 2 ¼ cups quick rolled oats
- ½ cup walnuts, chopped
- ½ teaspoon salt
- 2 teaspoon pumpkin pie spice
- 2 teaspoons cinnamon, divided
- ½ teaspoon baking powder
- 1 ¼ cups milk
- 2 eggs
- 3 tablespoons unsalted butter, melted
- ¼ cup maple syrup
- 1 teaspoon vanilla
- 2 apples, peeled and sliced ¼-inch thick
Powdered Sugar Glaze (optional)
- 3 tablespoons unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 3 tablespoons warm water
Instructions
- Heat oven to 350 degrees. Grease an 8-inch-by-8-inch baking dish.
- In a large bowl, combine the oats, walnuts, salt, pumpkin pie spice, cinnamon and baking powder and stir to combine.
- In a separate bowl, whisk together the milk, eggs, butter, maple syrup and vanilla. Set aside.
- Toss the apple slices in the remaining cinnamon, and place half the slices on the bottom of the baking dish. Pour the milk mixture over the oats and mix until combined, then pour in the baking dish. Top with remaining apple slices.
- Bake for 35 minutes or until golden brown and apples are softened.
- Let cool for 5 to 10 minutes. If desired, drizzle with powdered sugar glaze and serve while warm.
