Goat Cheese Frittata with Fresh Greens Recipe

  1. In a large bowl, whisk together eggs, milk, goat cheese, red pepper and salt until will combined.
  2. Preheat broiler on oven. In a large cast-iron skillet, melt the butter. Add onion and saute until translucent. Sprinkle greens evenly over onion, and pour the egg mixture over the greens. Cover and cook over medium heat for 6-8 minutes, until eggs begin to set.
  3. Remove skillet from stovetop and place under broiler with the lid off. Broil for about 3 minutes, until golden and bubbly.
  4. Remove from oven, and top with salmon (or chorizo), if desired. Garnish with parsley.
  5. Cut frittata into triangles, and serve immediately.


  1. This frittata was amazing! The smoked salmon on top was the kicker and combined with the creaminess of the egg and goat cheese was heavenly. My husband loved it and suggested that next time I make it, I top it with bacon instead. Can’t wait to try that one. A gourmet dish that is very easy too.
