Ingredients

  • 2 pie crusts (for 9-inch pie)
  • 16 ounces peach preserves
  • 2 cups fresh cherries, pitted

Glaze

  • 1 cup powdered sugar
  • 1 teaspoon lemon zest
  • 2 teaspoons milk

Instructions

  1. Heat oven to 400 degrees.
  2. Roll out pie crusts. Cut each piece into four wedges, and roll each of those quarters into a flat circle (so you are dividing the two pie crusts into eight smaller crusts).
  3. Spoon the preserves onto the center of each of the eight circles. Place the cherries on top.
  4. Fold the circle into a “purse,” bringing the edges toward the center in a circular pattern. Secure well.
  5. Place the pies on a cookie sheet and bake for about 20 minutes, until golden.
  6. For the glaze, stir all ingredients together until well blended. Spoon glaze evenly over pies while they are still warm.
  7. Serve pies when cool enough to pick up.

  1. I believe the glaze needs more than 2 teaspoons of milk…more like 2 tablespoons.
