- Heat oven to 400 degrees.
- Roll dough from never-fail pie crust recipe into a 12-inch circle. Place dough on a pizza pan or cookie sheet.
- Cover the center with peach jam to within 1 ½ inches of the edge. Place apple slices over jam, and cover with lemon juice.
- Mix together sugar and cinnamon, and sprinkle over fruit. Roll edge of dough to form a crust around the tart.
- Bake for 45 minutes. Cool, and serve with a dollop of whipped cream and sprig of mint.
