Sweet Potato Pineapple Casserole

  1. Preheat oven to 350 degrees.
  2. Beat eggs, sugar, salt, milk and flour together.
  3. Add sweet potatoes, pineapple and butter, and mix well to combine.
  4. Bake uncovered in a 9×13 casserole dish for 45 minutes.


  1. I have made this dish for years. And its a hit anywhere! People who claim they don’t like sweet potatoes usually like this. When they taste it, its different. Goes great with ham or turkey. The difference is my recipe calls for 3 cups of shredded sweet potatoes instead of 4.
