Best Ever Pumpkin Bars Recipe

  1. For bars, mix the oil, sugar, eggs, pumpkin, cinnamon, baking soda, baking powder and flour together.
  2. Grease and flour a jelly roll pan.
  3. Bake at 350 degrees for 20 to 25 minutes. Cool.
  4. For frosting, combine ingredients and mix well. Spread over cooled bars.


  1. Halved the recipe, used coconut oil, added walnuts, and made as cupcakes for Thanksgiving & a Half – they were fantastic!

  2. This recipe turned out wonderful. I think I over mixed and they were a little denser than pictured, but I prefer dense cake, so it was a plus for me. My four kids absolutely love them!! I used fresh pumpkin instead of canned. Didn’t have enough vegetable oil so I used equal amounts of margarine melted for the oil. And instead of just cinnamon, are used pumpkin spice seasoning for the cake mix, and I used pumpkin spice extract instead of vanilla extract for the icing. Absolutely wonderful
