Strawberry Lemonade Ice Pops

Ingredients
- 1 cup water
- 1 cup sugar
- 3 cups fresh strawberries or other berries of your choice
- ½ cup fresh lemon juice
- ½ cup fresh herbs such as mint and/or rosemary, loosely packed, optional
Instructions
- In a medium saucepan, bring sugar and water to a boil, then reduce to a simmer. Stir occasionally until slightly thickened (to the consistency of corn syrup), about 10 minutes. Set aside to cool.
- Place strawberries and lemon juice (and herbs, if using) in blender or food processor. Puree until smooth. If using herbs, puree until they are very well chopped.
- Slowly pour in simple syrup until well combined. Pour into ice pop molds, and freeze for about 8 hours.
Tips & Notes
To make frozen smoothies or scoopable flavored ice, freeze the mixture in a freezer-safe container for 8 hours. Place chunks of mixture in blender or processor, and puree until light pink and smooth. Blend longer for a smoothie texture, or refreeze for scooping.
