Watermelon Lavender Sorbet Recipe
Beat the heat with this refreshing watermelon-lavender sorbet recipe.

  1. In a small saucepan over medium high heat, add ½ cup watermelon pulp, sugar, lavender and salt. Bring to a slow boil, then simmer 5 minutes. Remove heat and cover for 10 minutes.
  2. Place strainer over a large bowl and pour syrup mixture through, straining out lavender flowers. Add remaining 4 cups watermelon, lemon juice and vodka. Stir until blended.
  3. Pour into container, cover and place in freezer. When semi-solid, mash up sorbet with a fork and freeze again. When frozen, place sorbet mixture into a blender or food processor and process until smooth. Scoop desired amount into a small bowl, garnish with a small wedge of watermelon and a lavender sprig.

Tips & Notes

The vodka used in this recipe helps to prevent the sorbet from setting up too firm.

  1. I’ve always wanted to try a flower essences in cooking.. thanks for sharing this cool summer recipe on foodie friday.

  2. Hi Adelina,
Thanks for your feedback! Any type of fruit juice can be substituted for the vodka. A variety of berry juice might blend well with these flavors, like cranberry or blueberry.

  3. I have been using lavender in shortbread cookies and brownies for about 2 years now. Yummo! Just add a tablespoon to your mix (run the entire dry mix with lavender thru a food processor to cut up the herb and make the mixture really fine and airy) the follow the directions to combine with wet ingredients (if needed) and bake. Holy cow! You will be wowwed by all who taste them! Amy
