Lemon, Thyme and Mustard Basting Sauce

This basting sauce has a fresh, light taste and can be used with a number of grilled meats or vegetables, from chicken and fish to peppers, squash and asparagus.

Ingredients

  • 1 stick butter, diced
  • 1/3 cup shallots, chopped
  • 1/4 cup olive oil
  • 3 tablespoons Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon lemon peel, grated

Instructions

  1. Combine all ingredients in a heavy medium saucepan.
  2. Whisk over medium heat until butter melts and sauce is well blended.
  3. Season to taste with salt and pepper.
  4. If making ahead of time, cool. Whisk over low heat to re-warm before using.

Tips & Notes

This sauce can be made three hours ahead.
