Beef and Mushroom Kabobs

Marinade beef cubes overnight for a delicious grilling party, with grilled veggies and mushrooms to accompany.

Ingredients

  • ½ cup olive oil
  • ⅓ cup soy sauce
  • ½ cup lemon juice
  • 2 tablespoons prepared mustard
  • 2 tablespoons Worcestershire sauce
  • 1 clove garlic, minced
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 ½ pounds lean beef round or chuck, cut in 1-inch cubes
  • 12-16 mushroom caps
  • boiling water

Instructions

  1. Mix oil, soy sauce, lemon juice, mustard, Worcestershire sauce, garlic, salt and pepper. Pour into a zip-close bag and add beef cubes. Seal bag and refrigerate overnight, turning occasionally.
  2. When ready to cook, preheat grill. In a large bowl, pour boiling water over the mushrooms and let stand a few minutes. Drain mushrooms and thread on skewers, alternating between marinated meat and mushrooms.
  3. Grill over hot coals for 5 minutes with lid down. Turn skewers and grill for 5 more minutes with lid up.

Tips & Notes

Cube and skewer a red onion, bell peppers or other veggies for more flavorful kabobs.
