Boneless Pork Loin Roast with Herbed Pepper Rub

This flavorful rub will perk up a plain pork loin. Serve as a holiday entree.

Ingredients

  • 1 3-pound boneless pork loin roast

Rub:

  • 2 tablespoons cracked black pepper
  • 2 tablespoons Parmesan cheese, grated
  • 2 teaspoons dried basil
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried thyme
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt

Instructions

  1. Pat pork dry with paper towel.
  2. In a small bowl, combine all rub ingredients well and apply to all surfaces of pork roast. 
  3. Place roast in shallow pan in a 350 degree oven for 1 hour until internal temperature on a thermometer reads 145 degrees. 
  4. Remove roast from oven; let rest about 10 minutes before slicing to serve.
