Fresh and simple, this cabbage stir-fry features portobello mushrooms, green peppers and green onions.
- Remove core from cabbage and chop into 2-inch strips. Cut the mushrooms, green pepper and green onions (use green and white parts) into thin slices. Chop the garlic.
- Preheat 1 tablespoon oil in a large saute pan on medium for 2 to 3 minutes. Place cabbage in pan and cook for 5 to 7 minutes, tossing like a salad as it cooks.
- Add the remaining tablespoon of oil, and stir in the garlic, green pepper, green onions and mushrooms. Cook for 3 to 4 minutes or until mushrooms and cabbage are tender.
