- Place chicken breasts in zipper-seal bag. Using a rolling pin or similar implement, flatten the thicker parts of the chicken so they match the thinner parts. You want a consistent thickness (no thinner than 3/4 of an inch) throughout to ensure the chicken cooks evenly.
- Mix marinade ingredients and pour over chicken. Marinate at least 2 hours or overnight.
- Remove from bag.
- On gas grill over medium-high heat, grill chicken breasts with lid down for six minutes. Turn and grill with the lid up 6 to 10 more minutes or until chicken reaches 170 degrees on a meat thermometer.

Can you make this on a charcole grill??? I was planning on making this but now hold off because we don’t have a gas grill :/
Absolutely! I have made this on a charcoal grill or even used the marinade recipe and just baked chicken in the oven. Just follow the instructions up to step 3, and then grill your chicken as you would normally on a charcoal grill (6-8 minutes for each side for boneless breasts, until internal temperature reaches 165 degrees on a meat thermometer).

We know what you mean, it seems like people either love or hate cilantro! Parsley would definitely work with this recipe. Basil would work too, and we suggest trying lemon basil to stick with the citrus theme. You could even use lemon juice in place of the lime juice. Hope this helps!

Wondering how this would work in the crock pot. Could I cook it in the marinade or drain and just let it roast?

This chicken marinade is absolutely delicious! I used a bit more cilantro and do not mince garlic in a marinade, I prefer to press it. I pressed 3 large cloves. The flavors were perfectly balanced and made the chicken so delicious! Hubby approved! Served it with a side of corn and a tossed green salad. Great recipe!
