- 6 bone-in chicken thighs with skin
- 3 tablespoons butter
- 1 lemon, thinly sliced
- 2 sprigs fresh sage
- salt and pepper
- Preheat oven to 400 degrees.
- Loosen the skin from the chicken. Gently rub butter under the skin, then place slices of lemon and two sage leaves under the skin. Season with salt and pepper.
- Place the chicken thighs on a roasting rack and roast until the internal temperature reaches 165 degrees, about 30-45 minutes.
Tips & Notes
No fresh sage on hand? Substitute with 1 teaspoon of dried sage.
